We get it, you're busy having fun in the mountains and there just aren't enough hours in the day to by an around-the-clock gourmand. So you bought an Instant Pot because hey, they save some time and they're pretty darn convenient, and now you're looking for recipes.

Instant Indian by Rinku Bhattacharya is here to help. This Instant Pot approved cookbook features 100 recipes from across the subcontinent and across the palate, so everyone will find something to like. Rinku is a an award-winning cookbook author and the founder of Spice Chronicles, so you know you're getting some good and tasty advice here.

We've tried a good sampling of the recipes and they're all fantastic. The book has a little background about the Instant Pot and Indian cooking and then dives into the recipes, organized by meal type. There's even chapters on desserts and drinks, as well as chutney. About the only thing we ended up doing differently is adding more salt, oddly enough, but that might just be our Alaskan palates.

If you're looking to spice up your life, or someone else's this holiday season, you can't go wrong here. Vegetarian, seafood, meat and poultry are all represented and you'll be the star of the kitchen in no time.
